Kid/Dino friendly weeknight meal

This is a favorite of Coco's and her Dino Daddy. Easy wonton soup, healthy scallion pancake and what ever veg you've got on hand roasted in the toaster oven



In a food processor blend: 

2 jumbo scallops  

1 egg yolk

4 ounces shrimp (peeled/deveined) 

1 napa cabbage leaf

1 tbs light soy sauce

1 tsp rice wine

1/4 tsp toasted sesame oil

1 tbs oyster sauce

1 garlic clove

lightly dust a baking sheet with cornstarch and follow video below with store bought wonton wrappers


bring to a boil: 

6 cups fish or chicken stalk

1 tbs soy sauce

1 tbs yellow rice wine

1/2 tsp toasted sesame oil

4 baby Bok Chou (cut lengthwise into strips) 

Lower to a rolling simmer and add wontons (approx 4 min) add Bok Choy (1 min)

laddle into fun bowls  


wisk together: 

1 cup spelt flour

1/4 cup brown rice flour*

1 1/4 cups ice water

1 tbs toasted sesame oil

1/2 cup thinly sliced scallion  

course sea salt

heat 1/4 in neutral oil (canola, grapeseed) in a large nonstick skillet over high heat . Spoon mixer in oil turning, less than two min per side. Let rest on paper towling. So yummy dipped in the broth of the wonton soup.

as for the veg... Sprinkle any hardish veg (no leafy ones) with olive oil and sea salt and bake at 400F. Stiring occasionally, times  vary. This little dino will eat up almost anything prepared this way.
